R&D Manager - Food

job summary:
We are currently seeking an R&D Manager for a large confectionery and baking manufacturer located in central Long Island. The ideal candidate will have a background in Product Development in a food science setting. This person will be developing new items, shelf life evaluations, providing nutrition declarations, formula control etc. This is a permanent position with 401k, PTO, benefits. Responsibilities include:

- Evaluate by bake testing and specification comparison all proposed raw material additions and changes. Prioritize by possible benefit and need.

- Provide updated nutrition for all new formulas and for all formula changes.

- Conduct shelf life studies of all products, new and standard to establish accepted shelf life norms at standard conditions. Monitor existing products for changes from the norm

1. New Product and Development

2. Raw Material Evaluation

  • Evaluate by bake testing and specification comparison all proposed raw material additions and changes. Prioritize by possible benefit and need.
  • Maintain files of specs for alternates for all raw materials
3. Providing Nutrition and Ingredient Declarations

  • Provide updated nutrition for all new formulas and for all formula changes.
  • Maintain database with all experimental, alternate and official formulas
4. Sample Production for Customer Evaluation

5. Shelf Life Evaluations

  • Conduct shelf life studies of all products, new and standard to establish accepted shelf life norms at standard conditions. Monitor existing products for changes from the norm
  • Conduct shelf studies of all formula and process changes
6. Formula Control

  • Initiate approvals for all formula changes. Provide Sales, Ops and Finance with data required for approvals. Maintain file of approved formulas
7. Assist Production Troubleshooting

8. Research Industry Trends

 
qualifications:
  • BS related to Food Science
  • 3-5 years experience related to food product development
 
skills: FDA, Biology, Food Product Development, USDA
