RESPONSIBILITIES: Personal responsibility for following safety rules, SOPs and/or GMP guidelines, and that team members follow these as well. Perform Pre-Op Inspection for production areas, before starting production. Reviews recipes and procedures before starting production. Organizes production lines accordingly to the scheduled production. Inspects all ingredients supplied to make sure they correspond to the recipe being produced. Assigns production team member to the different tasks required in order to process and bake all scheduled productions. Coordinates with Packing Supervisor daily production flow. Executes recipes following scaling, mixing and baking instructions for each item produced. Perform Product Quality Control inspections with Production Team, to make sure product complies with quality standards; these inspections include taste, smell, color, texture and weight. Inspects that all products are identifiable when coming out of the oven. Maintains daily production records in an organized and clean manner. After finishing production, brings Production Order document to Packing supervisor. Oversees the hiring, training and performance of production team members. Notifies management when equipment needed is not working properly. Informs management office when ingredients and production supplies are running low.
