Responsibilities
- Conduct visual inspections to ensure that lines, equipment, and utensils are free of chemical residues, food residues, or dirt.
- Perform quick swabs on contact points to immediately validate the effectiveness of cleaning.
- Authorize the start of production once it is confirmed that hygiene conditions meet the plant's standards.
- Take samples (swabs) from contact surfaces and drainage areas for analysis of Listeria, Salmonella, or indicators according to the environmental monitoring plan.
- Check thermometers, cooking times, and metal detectors to ensure compliance with the HACCP plan.
- Conduct audits of product weights and dimensions to prevent waste or products that are out of specification.
- Ensure that the third shift operators correctly complete their quality and production records.
- Collect and organize samples from the produced batches for shelf-life and traceability studies. Product Segregation (Hold): Identify and hold any product that does not meet the quality standards detected during the shift.
