Research & Development
- Develop, test, and refine new cake recipes and product lines aligned with company objectives and customer requirements.
- Conduct formulation trials in the Test Kitchen and coordinate production-scale trials at the manufacturing facility.
- Evaluate product attributes including texture, crumb structure, flavor profile, moisture retention, yield, and shelf stability.
- Scale formulas from small-batch testing to full production while maintaining quality and consistency.
- Document all development stages, including ingredient specifications, batch adjustments, trial results, and revision history.
- Source and evaluate new raw materials and ingredients for product innovation and cost optimization.
- Assist in the completion and annual review of product specification (PSI) packages.
- Review and verify first print labels for new products to ensure ingredient accuracy, allergen declarations, and regulatory compliance.
- Support reformulation initiatives for cost efficiency, ingredient updates, or quality improvement.
- Perform other duties as assigned to support operational needs and continuous improvement initiatives.
- Follow and reinforce all QA, GMP, HACCP, OSHA, and SQF regulations, policies, and procedures.
- Assist in annual audits of nutritional panels and allergen statements against current ingredient specifications.
- Conduct random product weight and temperature verification to confirm compliance with declared label specifications.
- Verify proper documentation of production checks performed by Mix, Bake and packaging teams.
- Support environmental monitoring programs including allergen, microbiological, and sanitation validation swabbing.
- Assist in root cause investigations related to product deviations or non-conformances.
- Collaborate with QA and Production teams to improve product consistency and reduce waste.
- Work closely with Production, Purchasing, and Quality teams to support successful product launches.
- Communicate formulation updates and process changes clearly during commercialization.
- Support training initiatives related to product specifications and quality expectations.
- Assist in continuous improvement projects related to product performance and operational efficiency.
qualifications:
Education and Experience
- Associate's or Bachelor's degree in Food Science, Baking & Pastry Arts, Culinary Science, or related field preferred.
- 3-5 years of experience in bakery R&D, food manufacturing.
- Experience scaling formulations from test kitchen to commercial production preferred.
- HACCP or Food Safety trainings preferred.
- Strong understanding of baking science, ingredient functionality, and formulation principles.
- Knowledge of GMP, HACCP, SQF, and food safety regulations.
- Excellent documentation and organizational skills.
- Strong analytical and problem-solving skills.
- Ability to manage multiple development projects simultaneously.
- Effective verbal and written communication skills.
- Proficiency in Microsoft Excel, Word, and documentation systems.
- Mathematical skills including ingredient conversions and batch scaling.
- Commitment to safety and maintaining a clean work environment.
- Bilingual (English and Spanish) would be a nice plus, not requirement.

- Work will be performed at two company locations: Test Kitchen - Redlands, California and Manufacturing Facility - Perris, California.
- The R&D Technician will begin their workday at the Redlands Test Kitchen and will travel between both locations as required based on active development or production needs.
- Schedule distribution may include three (3) days at one location and two (2) days at the other; or alternating days between facilities depending on project priorities.
- Reliable transportation between both sites is required.
