A premier food manufacturing leader in Southern California is seeking a hands-on R&D Technician to drive new product innovation from concept to full-scale commercial launch. Operating on-site between facilities in Redlands and Perris, CA, this individual contributor leads bench-top formulation, ingredient testing, and production scale-up for retail sheet cake and muffin product lines.

responsibilities:
- Lead bench-top testing, recipe formulation, and trial scaling for cake and muffin product lines.
- Evaluate product attributes including texture, crumb structure, flavor profile, moisture retention, and shelf stability.
- Conduct test kitchen trials and coordinate full production-scale runs in the manufacturing plant.
- Document formulation adjustments, raw material specifications, trial results, and batch histories.
- Collaborate with Quality Assurance to ensure compliance with GMP, HACCP, SQF, and regulatory labeling standards.

Required:
- 3+ years of R&D experience in bakery or food manufacturing.
- Master baker-level expertise with cakes, cupcakes, and muffins.
- Proven track record in formulation refinement, shelf-life testing, and commercial scale-up.
- Ability to operate independently as a stand-alone, fully hands-on R&D function.
- Strong organizational and documentation skills with the ability to work in a fast-paced environment.
- Degree in Food Science, Culinary Arts, or Baking & Pastry Arts.
- Bilingual fluency in English and Spanish.
